The D'Onghia Farm is located in the territory of Mottola, land rich of ravines and rocky villages. We make crushing and destemming, for pressing we use the vertical wooden press, fermentation takes place with indigenous yeasts and uncontrolled temperature in steel tanks. 2/3 decanting until bottling, which takes place between January and February and then refine in bottle for another 3 months.
