Until 2009, no research work aimed at profoundly understanding practices and problems surrounding natural vinification and maturation of wine had been carried out.
For this reason, we organized a conference called “Natural Yeasts” with the aim to understand what are the most common problems in the cellar encountered by winemakers within the association. VinNatur decided to dedicate an entire day on this crucial issue about natural fermentation with indigenous yeasts, the subject of numerous discussions among critics and producers, giving a young but enterprising winemaker the role of keynote speaker.
Federico Giotto is a consultant in several Italian wineries, some of whom are part of VinNatur. He was born in Conegliano Veneto, where he currently lives and in 2000 he graduated in oenology at the University of Padua. Since the very beginning of his studies, he has been driven by the desire to experiment and research, and this led him to collaborate with numerous researchers around the world. In 2003 he founded the Giotto Consulting bringing together people who believe in his philosophy of work: to enhance wines characterized by their own identity, original interpreters of the people and the territory.
